Under the direction of Italian culinary legend, Piero Selvaggio, LABORATORIO DI PASTA features only Artisanal pasta from the top Italian producers, and our production of true regional Italian pastas which includes Bigoli, Pici, Torteli al Plin, Cavatelli and Agnolotti. Our pasta is taken through a process whereby the dough is slowly extruded through bronze dies, creating a rough surface throughout the pasta. It is this process that gives our pasta more complexity and maximum sauce absorption!
On the lighter side, we proudly offer our guests the option of choosing low carb, gluten-free menu items, using local, organic flour. Our vegan options include classic pasta dishes like spaghetti and penne as well as baked and stuffed pasta choices.
